For the food portion of my Christmas breakfast posts, I thought I’d share what is on the menu for the Christmas morning. I try to have a variety of items + flavors {sweet/savory, light/filling, hot/cold} and because everyone has different tastes + some dietary restrictions, having a good amount of options is always the way to go so everyone leaves satisfied. 1. BLUEBERRY FRENCH TOAST BAKE
I was going to do my usual creme brulee french toast that I have made for years {because it’s AMAZING!} but as I was cleaning out the freezer the other day I saw we have a bunch of frozen blueberries leftover from our summer picking + thought a blueberry french toast would be a great way to use them up! This recipe from Deliciously Yum is the one I plan on trying.
2. MINI FRITTATAS
My husband loves frittatas + while I could make one or two big ones it is a lot easier to make a lot of little ones that people can pick over + there will be a larger variety for guests to choose from. Luckily my mom also has an awesome 24 count muffin that will make cooking these a breeze. Thanks, mom!
You can put almost anything into a frittata so there is no real recipe that’s needed but HERE is one from A Sassy Spoon that has some general guidelines. On a side note, I love to use cubed pancetta in all my egg-based dishes that call for bacon because it’s way less messy to cook + it’s already the perfect size…no more breaking apart greasy bacon!
3. SNOWFLAKE PULL-APART MONKEY BREAD
I was initially considering getting an assortment of pastries + doughnuts {donuts??} to have out for snacking but then thought it would be nice to have something a little more festive. Now, I have never made this before but it looked so beautiful + intriguing that I am going to give it a go. The best part is it can be cooked a day or so ahead of time + just rewarmed in the oven on Christmas morning. So if it turns out horribly, then store-bought pastries are my back up!
There are a lot of variations of this recipe but because I am particularly fond of Half Baked Harvest recipes I am going to use THIS one. Seriously, if you haven’t visited this website or followed along on her Pinterest account, you are missing out! You can even get her darling cookbook below…perfect gift for the foodie in your life!
4. OVEN-COOKED BACON
Do you love bacon but avoid cooking it at all costs? Well, if you haven’t cooked bacon in the oven, you are doing it all wrong. My aunt told us about this method a couple of years ago + after my husband cooked it once we felt like complete idiots for not having done it this way all along! No grease splatters or burns on your hands + arms. Easy clean up. Minimal smell. Extra crispy. Tell me that’s not a total win!
Apparently the degrees + cooking time vary according to the thickness of the bacon but it seems like the most essential parts are a rimmed baking sheet {so the grease doesn’t pour onto the oven} and parchment paper or tin foil. We used foil the last time but may try parchment this round. HERE is a general method for cooking regular sized slices.
5. KODIAK CAKES PANCAKES + WAFFLES
When it comes to pancake mix I have been a total convert to the Kodiak Cakes brand for many reasons. First, they are made with whole grains + the fact that the mix needs to be kept refrigerated after opening tells you that the ingredients are fresh + without a ton of added preservatives. Second, they have added protein which is a huge parenting win when it comes to kids’ picky eating habits. Third, they have such an awesome variety of flavors + even gluten free versions, that we never get bored with plain pancakes or waffles.
6. FRESH FRUIT
Always a must at breakfast!
7. COFFEE, TEA + MIMOSAS
Warm + bubbly beverages are the perfect way to keep the coziness of Christmas morning going all day. We usually stick with a Colombian style coffee which seems to be a crowd-pleaser but I love Wawa’s Holiday Blend coffee + will be treating myself to this since I haven’t been drinking much coffee lately {and somehow have survived!} For mimosas I love LeMarca prosecco + OJ, grapefruit, cranberry or pomegranate juice.
