Easy Rustic Bread Recipe

Materials needed: Dutch oven (I use this 6 quart one from Lodge), large bowl (mine is old from Pier 1), parchment paper, wooden spoon, plus ingredients below:

Ingredients

  • 3 cups All-Purpose Flour (I use King Arthur Organic)
  • 2 teaspoons Kosher Salt
  • 1/2 teaspoon Active Dry Yeast
  • 1 1/2 cups lukewarm water

Directions

  • In a large bowl, stir together the flour, salt and yeast until combined.
  • Mix in the lukewarm water and stir until you get a shaggy dough ball.
  • Cover bowl tightly with plastic wrap or a bowl cover and let sit at room temperature for 8-24hrs, until it doubles in size.
  • When you are ready to bake, preheat the oven to 450 degrees F, and place the Dutch oven (without lid) in the oven to warm while bread goes through the second rise.
  • While Dutch oven is warming, turn dough out onto a well-floured surface and form the dough into a ball. NOTE: make sure your hands are well-floured, too!
  • Cover the ball with plastic wrap or towel for 30 minutes.
  • After the 30 minutes are up, remove Dutch oven and carefully (it will be hot!) place parchment paper to line the Dutch oven.
  • Place the well-floured dough into Dutch oven, cover with lid and bake for 30 minutes.
  • After 30 minutes are up, remove lid and continue to bake for another 10-15 minutes. Keep an eye on it so the loaf doesn’t burn.
  • Once finished baking, remove bread and place on cutting board or cooling rack. Let cool, slice and enjoy the fruits of your (minimal) labor!
